Mexican Beef Bowl
Serves 4
500g lean beef mince
1 large microwave bag of long grain white rice, or 4 servings of fresh cooked rice
2 teaspoons of Mexican seasoning (I use Mingle)
1 tablespoon tomato paste
1 tin black beans or Mexican beans
1/2 cup frozen corn
Tasty cheese, shredded
Optional toppings - Avocado, chopped cherry tomato, onion, jalapenos, shredded lettuce, salsa, coriander
Step 1 — If cooking rice from scratch, start that now. While it cooks, brown the mince until almost done, then add the seasoning and tomato paste.
Step 2 — Add the corn, beans, and a splash of water. Let it simmer on low for 5 minutes to thicken slightly. If using microwave rice, cook it now.
Step 3 — Assemble your bowls: start with the rice, add the beef mixture, sprinkle over cheese, then finish with your toppings
