Peanut Butter Rice Bubble Bars
Serves 16
3/4 pack of rice bubbles (I use gluten free rice puffs)
1 pack Cadbury chocolate melts (dairy or dark)
2 tablespoons coconut oil
4 tablespoons natural peanut butter
Optional - 1-2 scoops of chocolate protein
Step 1 — Melt the chocolate, coconut oil, and peanut butter in a large bowl.
Step 2 — Add the rice bubbles (and protein, if using) and mix until fully coated. You want every rice bubble covered so the bars hold together — start with less and add more until the mixture is fully coated.
Step 3 — Line a container or tray with glad wrap, press the mixture in firmly, cover, and refrigerate until set.
Step 4 — Once set, cut into small squares. Keep refrigerated — the coconut oil means they soften quickly in warm weather.
Ive made so many variations to this recipe, a few of my favorites:
*Change the dairy chocolate to white melts and peanut butter to pistachio spread, or almond butter
*Sprinkle with 100's and thousands for the kids!
*Add a small handful of fruit and nut mix.
Allergic to peanuts? Change it to Nutella or a nut free butter.
